It’s usually in bed on Saturday mornings that you get these fanciful ideas that you will make something SPECTACULAR on the weekend. Well this Saturday morning after staying in bed till hunger pangs start to kick in, we decided on making hash browns. A quick search from bed showed that all sites agree on one thing – get the potato and onion mixture as dry as possible. So, we set to work – he was tasked with grating and I ended up with frying duties. This was how it turned out. Except he insisted that hash browns were always at right angle triangles to get maximum crispy bits. Too hungry to care, these were eaten anyway.

The recipe:
3 medium sized potatoes, grated
1 medium sized onion, grated
optional bacon bits (crispy)
1 beaten egg
seasoning.
After grating, place the first 2 ingredients in a tea towel then squeeze out the excess liquid. Add bacon bits, seasoning and egg and mix well. Fry till crispy. Make sure the oil doesn’t get too hot or you’ll end up with some tasty burnt bits.
