Honey Roasted Cashew Nuts

Having brought back a bag of raw cashew nuts from India, I’ve been saving them for some time wondering what to do with them. I decided on a honey roasted treat, and this certainly was worth it. Mix together about a tablespoon of butter, honey and syrup, 1 tsp of salt, vanilla essence and cinnamon powder. Microwave if necessary to ensure the butter is melted to make a ‘dressing’ for the cashews. Pour over the raw cashews and roast in the oven for 12- 14 minutes, mixing it up half way through. Sprinkle with sugar and salt after removing them from the oven then let to cool completely before storing in an air tight container.
