Dried shiitake mushrooms are one of those things that I often dip my nose into and marvel at how it reminds me of home. We had a go at making some spring rolls and dumpling this weekend, both which requires shiitake mushrooms for extra flavour. I like buying bags of dried shiitake mushrooms, they last for a long time and you get tasty mushroom juice out of it when rehydrating it in some hot water.
Other uses of shiitake mushrooms besides spring roll and dumpling mix… How about extra mushroomeyness to an instant noodle? Or cooking with oyster sauce and reducing it down for a flavoursome intense mushroom side dish? Or adding some rehydrated ones into a caramelised sweet and salty sauce with meat?
